An excellent vegetarian option for burgers are spicy butter bean burgers. They are packed full of goodness and taste as good (or in fact better) than any beef burger. Try this recipe for a lighter option after the festive season!

Ingredients
-1 can of butter beans
-1 whole onion diced
-2-4 cloves of garlic
-1 red chilly finely chopped
-2tsp cumin
-2tsp coriander
-Handful of fresh coriander
-½ cup bread crumbs
-1 egg for binding

Method
1.In a deep pan fry the onions, garlic
and chilly for about 5 minutes.
2.In a bowl mix together the beans,
cumin, coriander and bread crumbs
to make a smoothish paste.
3.Add the onions, garlic, chilly and
egg and mix together
4.With your hands make 4 equal
size burgers and then put in the
fridge
for about 15minutes.
5.In a pan heat up some oil and fry
the burgers on each side till crisp
and golden.
6.Garnish to taste, perhaps cheese,
avocado, tomatoes or salad!
For a delicious accompaniment try
a fresh tomato relish.
Ingredients
oil for frying
1 onion, sliced
1 garlic clove, crushed
1 red chilli, finely chopped
800g/1lb 12oz chopped tomatoes
200ml/7fl oz red wine vinegar
200g/7oz sugar
salt and freshly ground pepper
30g/1½oz capers in vinegar, rinsed
30g/1½oz baby gherkins, chopped
handful fresh coriander
Method
1. Heat the oil in a frying pan and fry
onion, garlic and chilli until soft.
2. Add the tomatoes and mix well.
3. Add the vinegar and sugar and
bring to the boil. Simmer for 30
minutes and season with the salt
and freshly ground black pepper.
The relish should be the consistency
of jam.
4. Stir in the capers and gherkins
and the chopped coriander. Add
more seasoning if required.
